The Australian retail vegetable market for the year ending December 2025 recorded continued value growth across several categories, although volume trends remained mixed.
While higher retail pricing supported value increases in some major vegetable categories, purchasing volumes declined in several lines. This highlights the ongoing influence of supply conditions, retail pricing and changing household purchasing behaviour across the fresh vegetable aisle.
Understanding the balance between value and volume performance remains important for growers, suppliers and retailers planning production, merchandising and promotional activity.
Strong Performing Vegetable Categories
Sweet potatoes recorded the largest increases among the vegetables analysed. Retail value increased by 23%, while volumes rose by 18% over the year.
Potatoes also recorded strong value growth, with retail value increasing by 11.7%, while volumes declined by 4.1%. Broccolini recorded increases in both measures, with value rising by 11.2% and volumes increasing by 14.1%. Cucumbers also showed growth, with retail value increasing by 7.1% and volumes rising by 4.5%.
Categories Showing Moderate Growth
Several vegetable categories recorded moderate increases in both value and volume. Onions increased in retail value by 7.1%, while volumes rose by 2.4%. Sweet corn recorded a 5.9% increase in retail value and a 0.8% increase in volume. Tomatoes recorded value growth of 3.3%, while volumes declined slightly by 0.6%.
Vegetable Categories Recording Volume Declines
Some vegetables recorded declining retail volumes during the period. Cauliflower showed the largest decrease, with retail value declining by 8.3% and volumes falling by 10.6%. Celery volumes declined by 9.2%, while retail value increased by 2.9%. Beans recorded a 2.7% increase in value while volumes declined by 6.7%. Head lettuce recorded value growth of 2.8%, with volumes declining by 4.2%. Carrots recorded a 0.8% increase in retail value, while volumes declined by 2.3%.
What These Trends Mean for the Vegetable Market
The retail vegetable market in 2025 demonstrates how category performance continues to be shaped by both supply conditions and consumer purchasing behaviour.
While some categories such as sweet potatoes and broccolini continue to expand through stronger demand, many staple vegetables are experiencing value growth supported primarily by pricing rather than increased consumption.
Tracking both value and volume performance across categories provides important insights for production planning, retail ranging and promotional strategy as the vegetable market continues to evolve.
